I'm trying to do meatless mondays, so was craving some really good veggie pizza. I'm also trying to use up food in the house without buying stuff, so I ended up making my own whole wheat flat bread! I found a recipe online and then added my own ingredients to make it a little sweeter, since wheat flour is a little bitter.
Whole Wheat Flatbread
3 cups of whole wheat flour
1.5 cups water
1 tbsp olive oil
2 tbsp flax seed (ground)
1 tsp salt
1 tbsp honey
Mix all the ingredients together in an electric mixer using the bread hook, and then place dough on floured surface. Cut into 4 quadrants.
Roll out each quandrant to a small round, using lots of flour. Placed on greased cookie sheets, and bake for 25-30 min at 350 degrees.
I found a recipe for artichoke flatbread, and it just sounded so good. I also had all the ingredients at home. While the flatbread was baking in the oven, I got a quick workout in, and then started the pizza! Of course, I didn't follow the recipe and added my own touch.
2 round flatbreads (recipe above!)
1 tbsp olive oil
2 cloves of garlic
4-5 artichoke hearts, drained and chopped
1 medium tomato, chopped
mix of italian cheeses
salt & pepper
fresh basil, rolled and sliced
Mix oil and crushed garlic, and some pizza seasoning in a small bowl. Brush both sides of flatbread with plain olive oil. Preheat gas grill, and then reduce to medium. Add flat breads to grill for 2 minutes, and then remove.
Top the grilled side of each flat bread with the olive oil mixture, spinach, artichoke and tomato. Top with cheese and sprinkle with salt, pepper and pizza seasoning. Return to grill and grill for 2 minutes more until bottoms are browned and toppings are heated through.
Top with fresh basil slices and serve with red wine! This was one of the most delicious things I've ever made. I highly recommend it!
