Last night for dinner, I had a crazy urge for homemade pizza. It's too hot to make anything in the oven right now, so I decided to make grilled pizza.
Preheat the grill for 5-10 minutes.
I used a store-bought pizza crust, and grilled the top face down on the grill for about 5 min.
While the pizza crust was on the grill, I chopped up some artichokes, kalamata olives, red pepper, tomato (from my garden) and fresh basil rolled and sliced (from my garden).
After I pulled the pizza crust off the grill, I put homeade pesto down as the base of the pizza, and sprinkled all the veggies on it, adding the strips of basil last. I topped with mozzarella and some freshly grated parmigiano reggiano, and then added some Italian seasoning on top.
Grill the completed pizza for 6-8 minutes, or until the cheese has melted.
It's so delicious!!
