So not all dinners can be homeade from scratch. And after a long day of cleaning, running, etc I don't really want to be spending a ton of time making dinner. So there is no shame in a "cheating" dinner!
I bought parmesean crusted chicken from the deli and baked for 40 min at 350. And then my friend, Trader Joe, helped out with his Aparagus Risotto - it's so good and so quick to make, and pretty healthy.
The only homeade item I brought to the table was a spinach salad and homemade dressing. The dressing is really easy to make, it's my mum's go to homemade dressing.
2 parts olive oil
1 part lemon juice
herbs de provence
spoonful of dijon mustard
garlic (I use 2 cloves)
The salad is also one of my favorites to make in the fall.
